Suckling pigs are small pigs that are wonderfully amenable to whole roasting, producing incredibly tender, juicy, and visually impressive dishes most popular in Segovia, Spain. This selection comes from Salamanca, and with a diet that includes whole milk, the meat has an exceptionally creamy and tart flavor that can easily satiate four to six eager palates.
